Spinach & Cheese Strata


Delicious. So delicious that I forgot to photograph the finished product. I used Garden of Eating's recipe which is based on Smitten Kitchen's recipe.  I made a few changes to the list of ingredients and to the preparation:
  • 5 oz fresh spinach
  • 1/2 large yellow onion
  • 2 tablespoons unsalted butter
  • 1/2 loaf French bread
  • 4 oz smoked cheddar
  • 1 oz grated Parmesan
  • 1 cup reduced fat milk (2%)
  • 3 medium eggs
  • no Worcestershire sauce
  • I did not chill the ingredients before baking and only baked the dish for 30 minutes.
